Meatloaf on the grill


The current issue of Midwest Living Magazine offers several recipes just in time for the grilling season, including one for Barbecue Meatloaf. I realize meatloaf rarely receives much enthusiasm, but this is not monotonous middle-of-the-week meatloaf. This one has a kick! At the Weber Grill Restaurant in Chicago, this substantial dish is generously served in six ounce slices.

The recipe for Barbecue Meatloaf is basic, consisting of commonly used pantry staples to produce hearty slices of deliciously grilled beef. And because of the contrasting barbecue sauces, the flavor is strongly enhanced, both inside and out. I’ve made this meatloaf twice now, and it was very well received both times. Why not add this unusual, tasty addition to your next backyard barbecue menu?

BARBECUE MEATLOAF

Prep: 30 minutes
Bake: 1 1/4 hours
Cool: 1 hour
Chill: 2 hours
Grill: 12 minutes

Ingredients:
1/2 cup fine dry bread crumbs
1/3 cup Weber’s Original Barbecue Sauce or your favorite barbecue sauce
2 eggs, slighty beaten
1 medium onion, chopped
3 tablespoons ketchup
1 tablespoon cooking oil
1 1/2 teaspoons salt
2 pounds ground beef (80 percent lean is preferred)
1/4 cup Weber’s Smokey Joe Hickory Barbecue Sauce or your favorite barbecue sauce

Additional sauce when serving:
Weber’s Smokey Joe Hickory Barbecue Sauce or your favorite barbecue sauce (optional)

In large bowl, mix bread crumbs, Weber’s Original Barbecue Sauce, eggs, onion, ketchup, oil, and salt. Add beef; mix well. Pack meat mixture into an 8×4x2-inch loaf pan and smooth top (pan will be very full). Place loaf on a foil-lined baking sheet to catch any overflow. Bake in 325° oven 1 1/4 hours or until meat loaf is done (160°). Remove from oven; cool 30 minutes on a wire rack. Carefully pour off fat in pan; cool 30 minutes more. Cover; chill at least 2 hours or overnight. Remove meat from pan; cut crosswise into 6 slices. For a charcoal grill, grill meatloaf slices on the greased grill rack, uncovered, directly over medium-low coals for 12 to 15 minutes or until heated through, turning once halfway through grilling and brushing with with 1/4 cup Weber’s Smokey Joe Hickory Barbecue Sauce the last 2 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium-low. Place meatloaf slices on greased grill rack over heat. Cover and grill as above.) Carefully remove meatloaf slices from grill. Pass additional barbecue sauce to serve, if you like. Makes 6 servings.
