For Kids and Grown-Ups Alike


One of the best ways to usher in the Summer season is with cool, drippy popsicles. Nothing like trying to catch the melting juices as they run between your fingers, making a big sticky mess.

In the July issue of Redbook Magazine, they shared a perfect recipe that everyone is sure to love.

Mocha Fudgesicles
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/4 cup (packed) cornstarch
1-1/2 teaspoons all-purpose flour
1/4 teaspoon coarse salt
1-1/2 tablespoons instant espresso powder
3 cups milk (skim, whole, whatever; all work fine)
2 teaspoons vanilla extract
1/4 teaspoon almond extract

In a medium pan, whisk together sugar, cocoa powder, cornstarch, flour, salt and espresso powder. Slowly whisk in milk until smooth. Bring to a simmer over medium heat, whisking continually until thickened (4-6 minutes). Remove from heat; stir in vanilla and almond extracts. Pour into ice-pop molds and insert wooden sticks; freeze until firm.
