Morton’s Steak Bible
The legendary steakhouse, Morton’s, recently published Morton’s Steak Bible. The cookbook features over 100 of the steakhouse’s recipes for its signature dishes such as porterhouse, New York strip and T-bone steaks. It also includes recipes for sides, desserts and drinks.
Sample recipes include the Key Lime Mortini, Smoked Salmon Pinwheels, Salad Niçoise with Pan-Seared Tuna, Velvet Lobster Bisque, Baked Lemon-Oregano Chicken and Lamb Chops with Baked Apples, Creamed Spinach, Hash Brown Potatoes, and Hot Chocolate Cake and Upside-Down Apple Pie. In addition to recipes, Morton’s Steak Bible provides tips, stories about the famous steakhouse, anecdotes about celebrity visits and wine pairing recommendations.
The genesis of Morton’s Steak Bible was constant requests for recipes from the restaurant. Klaus Fritsch, a co-author of the cookbok and “veteran chef and co-founder” of Morton’s, went on a book tour to promote the cookbook. When speaking to Chris Wiebe of the Burbank Leader, Fritsch said: “I’d given away so many recipes, but people would always want more,” Fritsch said with a friendly grin. “So I might as well give them a damn book.” Fritsch told the Leader that he wanted the cookbook to be user friendly:
“I have tons of cookbooks at home and there are many great and popular books,” he said. “But this one is very simple. You don’t have to buy extra equipment and you don’t need 50 different spices … it’s very straight forward.”
When speaking to the San Jose Mercury News, Fritsch also revealed that all the steak recipes “were tested in a home kitchen using ordinary broilers, gas grills and charcoal grills. ‘We were impressed with the results,’ author Klaus Fritsch writes.”
