October Vegetarian Times Features Fall Passions, Ethnic Winners


The October issue of Vegetarian Times celebrates the Fall season, ethnic foods and the winners of its 2006 recipe contest.

Some highlights of the issue:

* An “Apple Extravaganza” featuring recipes for French Toast, Acorn Squash with Curried Apple Compote, Viennese Apple Strudel and a salad.

* A pizza primer with everything you need to know to toss a “do-it-yourself” dinner party. The Pizza with Caramelized Onions, Beans and Greens recipe looks great.

* A whole meal of spicy Indian recipes to make in under an hour.

* The five fruits of autumn – recipes featuring Asian pears, kumquats, quinces, pomegranates and passion fruit. The creamy yogurt with passion fruit coulis looks simple to make and very tasty:

Creamy Yogurt with Passion Fruit Coulis
6 passion fruit
¾ cup tangerine or orange juice
3 tablespoons sugar
3 cups low-fat Greek-style yogurt (or make your own by placing 4 cups of low-fat yogurt in a strainer over a bowl. cover and refrigerate over night)
Mint sprigs for garnish (optional)

1. Cut passion fruit in half and scoop pulp and seeds into sauce pan. Add juice, sugar and ½ cup water. Bring to a boil. Reduce heat to medium low and simmer 5 to 6 minutes or until slightly thickened. Strain out seeds. Cool.

2. Divide yogurt among 4 shallow bowls. Spoon passion fruit sauce over top. Garnish with mint springs, if desired.

* The “1 Food 5 Ways” section features pumpkin, one of the most popular and versatile vegetables of Fall. This issue has recipes for Moroccan Pumpkin and Lentils, Pumpkin Gratin, Savory Pumpkin Quiche, Pumpkin and Walnut Spoon Sweet and Morning Pumpkin Coffeecake.

* And, of course, the contest winners. The theme this year was easy ethnic recipes, and the winners all met that challenge. First place went to Tim Miano of Virginia and his Roasted Cauliflower in Lemon-Tahini Sauce. Second place went to Nidhi Chanani of California and her Matter Paneer Made Simple. Third place went to Sharman Schubert of Washington State and her Sweet Potato Fritters with Peach Salsa. The article also lists the recipes of those readers who earned honorable mentions.

The magazine’s website lags a bit behind in posting and none of these recipes or articles appear there yet.
