Cranberry and Almond Flapjack


Flap JackIgnoring the pat of butter and the large amount of sugar that goes into flapjack, I was hoping that the oats and fruit, in this case cranberries, would be a healthy addition to this weeks diet.  Not happy with this recipe though (from Fresh magazine). The result, although tasty, is far too crumbly. What I expect in decent flapjack is something crunchy on the outside but softer and chewy in the center. Any recommendations?

 

Cranberry and Almond Flapjacks
from Fresh magazine

100g almonds
100g dried cranberries
225g porridge oats
200g cubed butter
200g light muscovado sugar

Oven to 170C/325F mix all dry ingredients and add to a mix of the butter and sugar melted together. Spoon into a 20cm square tin. Bake for 20-30 minutes.

Hmmm..I’m interested in what you mean by flapjack. I thought it was just another term for pancake , but looking at the recipe, I guess not –at least not in British English.

flapjack - not sure what else it would be called. Its an oaty, sweet tray-bake type thing. Usually it does not contain fruit as here.
