Delicious Magazine - May 2007

It is Italy all the way in this months issue of Delicious; their annual Italian Food Special.
It has turned out to be one of those really inspiring issues where practically the whole weeks food has been inspired or made from its recipes. The image is of the Ricotta and Orange Tart - served slightly warm it benefits from using the very highest quality orange marmalade you can find. Don’t skimp on using the Orange Flower water either; is smells divine while mixing and adds an exotic dimension to the finished tarts flavour.
Also this week I’ve indulged myself with the magazines Spagetti alla Carrettiera, Grilled Trout, Bacon and Almond Salad and Stuffed Chicken with Pesto.
The Spagetti is known as ‘Cart Drivers Sauce‘ a mix of wild mushrooms, tuna in olive oil, smoked panchetta, parsley and Parmesan. Tasty, quick and a delight with an Australian Semillon-Viognier white. They recommend a light fruity red such as a Bardolino which I must try next time.
Next on the Barrow menu are Asparagus Crespelle a recipe supplied by famed Edinburh Deli/Bar Valvona and Crolla. They are asparagus wrapped in pancakes and served with a Parmesan and Fontina cheese sauce. Looking forward to finding a crisp Italian white to go with these!
If you buy this issue have a look at the delightful little dishes on page 29. I want some of these!! If you know where to buy them please drop me a line. They are single serve oblong oven proof-dishes with handles used, in this instance, to showcase Very Easy Mascarpone Fish Pies. Another dish I plan to serve later in the week.There are plenty more recipes in this issue of course, but these are the ones that immediately appealed.
