Tyler Florence’s Secret to Bistro-Style Fries


tylers-ultimate.jpgOne of my husband’s great quests is to produce perfect fries at home, and he’s very nearly there. In his book Tyler’s Ultimate, cookbook author and Food Network celebrity chef Tyler Florence offers up his take on producing perfect fries from home.

“There are two tricks to making crisp, bistro-style fries without having to heat up lots of oil. Roast potatoes at a high temperature and flip over only once. The longer they’re in contact with the baking sheet, the crispier they’ll be.

Here’s how to do it: Cut baking potatoes lengthwise into 16 wedges each. Toss in a bowl with a healthy amount of extra virgin olive oil and kosher salt. Spread in a single layer on a baking sheet, pop into a 425F oven and bake, turning once, 30 to 35 minutes until brown and crispy. Toss in a bowl with grated Parmesan. They’ll make any French-fry lover happy.”
