Rick Bayless Update
One of my favorite cookbook authors, Rick Bayless, teamed up with Sur La Table to create cooking demonstration videos for several popular recipes. He shows us how to make Guacamole Three Ways, Masa Tortillas and Salsa, Entertaining with Enchiladas, and Pairing Mexican Food with Wine. The videos can also be downloaded as podcasts and the recipes are available, too. Sorry for helping you find yet another way to waste time on the internet.
This release is well-timed since Rick’s classic cookbook, Authentic Mexican, is being released in a 20th Anniversary edition. According to the book’s description:
Since its publication in 1987, Authentic Mexican has become a classic. It offers the American aficionado the best from cooks in every region of the country. It’s a book that joins the fundamentals of the Mexican kitchen with the culture that discovered and created them. It’s a book that tells more than the rudimentary how-to: each recipe begins with a verbal snapshot of Mexico’s culinary culture and history, then colors in the details with notes on serving, important techniques, authentic ingredients (and their substitutes), plus traditional (as well as contemporary) variations.
Bayless also has a line of products using his restaurant, Frontera Grill, as a theme. There are a ton of products, including salsa, tortilla chips, sauces, pizzas, guacamole mix, and even a sangria mix. Bayless owns two other restaurants, Topolobampo and Frontera Fresco.
