Q&A with Sneaky Chef Missy Chase Lapine
Missy Chase Lapine is a healthy-food expert and has made numerous appearances on the Today Show. She is perhaps best known for her two cookbooks that focus on sneaking veggies into your guy … and your kiddos. Recently she answered a few questions for Woman’s Day magazine readers, sharing some of her best tips:
In your book, you sneak healthy foods like whole grains, vegetables and fruit purees into recipes. What if I’m short on time?
Many of the super-foods require no peeling or chopping. You can make a quick green puree by steaming broccoli florets and green peas, then pureeing in a blender or food processor with baby spinach and a little water. Add a few tablespoons to guacamole, or half a cup to chili.
What are some other ways to sneak in nutrients?
Make rice with chicken or vegetable broth, add pomegranate juice to a vinaigrette, or add oat bran and walnuts to pancakes.
Is there any way to make meatloaf healthier?
Use oat bran instead of bread crumbs for heart-healthy soluble fiber, B vitamins and protein. It also helps improve cholesterol levels. Use pureed veggies (carrots, yams, zucchini, cauliflower) in place of any other wet ingredient like ketchup.
