I knew I had to try the recipe for <a href="http://www.rachaelraymag.com/recipes/30-minute-meals/lime-rickey-chicky-and-buttered-almond-rice/article.html">Lime Rickey Chicky and Buttered Almond Rice</a> when I saw it in the August 2008 issue of <a href="http://www.amazon.com/gp/product/B000FTJ7JQ?ie=UTF8&#038;tag=everythingrac-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000FTJ7JQ">Everyday With Rachael Ray</a>. It was in my favorite feature of the mag - the 30-minute meals.</p>
<p>I found this to be a breeze to make, with only one complaint. We never use bitters in our house, so I was a little bitter about buying the bitters. I&#8217;ll have to go find a good cocktail to try to use some of it up now. However, there was the added bonus of helping me to use up the three bags of frozen peas in my freezer that I just noticed. Every little bit helps!</p>
<p>This recipe is another good way to get yourself out of the old chicken and rice rut. The basics are still there, but definitely jazzed up with some fun flavors. I cut the recipe in half, but made the entire recipe for the sauce and it turned out great.</p>
<p><a id="more-1582"></a></p>
<p>Here&#8217;s the recipe with my comments in brackets:</p>
<p>1/4 cup honey<br />
Juice of 2 limes, plus wedges for serving<br />
1 tablespoon bitters, such as Angostura<br />
2 tablespoons vegetable oil<br />
1-1/2 pounds chicken cutlets or tenders, sliced into thin strips [I like using the thin cutlets since it cuts down on the amount of slicing to make thin strips.]<br />
2 bunches scallions, sliced on an angle into 2-inch pieces<br />
Salt and pepper<br />
1/2 cup fresh or frozen green peas<br />
2 tablespoons chopped fresh cilantro<br />
One 6-ounce box rice pilaf mix, prepared according to package directions<br />
1/4 cup blanched almonds, toasted</p>
<p>1. In a small bowl, mix together the honey, lime juice and bitters and stir to dissolve the honey.</p>
<p>2. In a large skillet, heat the oil over high heat until smoking. Add the chicken and stir-fry for 3 minutes. Add the scallions and season with salt and pepper. Stir in the honey sauce; toss for 1 minute to coat.</p>
<p>3. Stir the peas and cilantro into the prepared rice. Add the nuts and fluff with a fork.</p>
<p>4. Transfer the rice to a platter; using a slotted spoon, mound the chicken over the rice. Serve with the lime wedges.

<p>I think I may be a fan of Tracey Seaman because I tend to love every recipe in the magazine with her name on it! This is another one of Tracey&#8217;s recipes and I will definitely be making it again.</p>
<p>The first thing that appealed to me was the short ingredients list. When I write my menu each week (sadly, I even post it on the side of the fridge), I&#8217;ve been starting with the weekly ads for my local grocery store to choose <span class="blsp-spelling-corrected" id="SPELLING_ERROR_0">proteins</span>. This week, pork loin was on sale, so that&#8217;s how this one ended up on our table.</p>
<p>Now, there&#8217;s nothing crazy spectacular about this meal. It&#8217;s a solid, easy, and flavorful weeknight choice that you can have done in 30 minutes or less, so give it a try! I served it with brown rice. Here&#8217;s the recipe with my comments in brackets:</p>
<p>1 pound boneless pork loin<br />
3 tablespoons cornstarch<br />
3 tablespoons vegetable oil<br />
1 bunch scallions, trimmed and sliced into 1-inch pieces<br />
4 cloves garlic, finely chopped<br />
2 eggplants (about 1 pound), cut into 1-inch cubes<br />
1 red bell pepper, cut into 1-inch pieces<br />
1 cup chicken broth<br />
1/2 cup store-bought stir-fry sauce</p>
<p>1. Cut the pork into 1/4-inch-thick slices, then cut the slices into 1/4-inch-thick slivers. [You really do want them nice and thin so they will cook faster.] Toss with 2 tablespoons cornstarch.</p>
<p>2. In a large skillet, heat 1 1/2 tablespoons oil over <span class="blsp-spelling-corrected" id="SPELLING_ERROR_1">medium high</span> heat. Add the scallions and garlic; cook, stirring, until golden, about 2 minutes. Add the pork and cook, stirring, until just no longer pink, 3 minutes. [This took about 5 minutes on my stove, but I may have cooked it too long.] Transfer to a bowl.</p>
<p>3. Add the remaining 1 1/2 tablespoons oil to the skillet, add the eggplant and cook, stirring, until slightly softened, about 3 minutes. Add the bell pepper and cook, stirring, until crisp-tender, about 2 minutes. In a small bowl, stir together the chicken broth, stir-fry sauce and remaining 1 tablespoon cornstarch; pour over the vegetables and cook, stirring, until the sauce is thickened, 1 to 2 minutes. Return the pork mixture to the skillet and stir until heated through, 1 to 2 minutes.

<p>The basic idea is that you can simplify it all by picking a few really great recipes that can be made ahead of time and then choose a few prepared foods to supplement the menu. That way you can spend your time chatting with guests instead of slaving away in the kitchen. Sunset picked smoked salmon, salami, cheeses and chocolates from all over the West and recommends the items for hostess gifts, too. Pretty good idea, huh?</p>
